Directions

  1. Heat the olive oil in a skillet. When it is very hot, add the cubed chicken breast and stir for about 2 minutes. Season with salt and pepper and remove from the skillet.
  2. Add the onion, garlic cloves, red pepper, and cauliflower florettes to the skillet. Season with salt and pepper and stir for 2 to 3 minutes. Add the water and lemon juice and cook for about 5 minutes.
  3. Return the chicken to the skillet, stir, and cook together for an additional minute. Sprinkle the chopped scallions on top, and serve over the cooked white rice.
