- Preheat oven to 375 F. Pierce potatoes several times with a fork and bake for 1 hour or until tender.
- Allow potatoes to cool slightly as you prepare the sauce.
- Heat butter in medium pan over med-low heat. Cook onion, ginger, and garlic for 3 minutes.
- Add cumin, coriander, and pepper and cook for 1 minute.

- Cut potatoes lengthwise, but do not cut all the way through the other side.
- Spoon about 1/4 cup sauce into each potato. Top with cilantro (coriander leaves).
