Beef chuck Arm pot roast, separable lean and fat, trimmed to 1/8" fat, all grades, raw

Directions
- Preheat oven to 450F (230C). Place beef in a roasting pan, cover with a clean kitchen towel or plastic wrap and let stand at room temp for 20 mins.
- Using a glazing brush, brush beef with olive oil, then season with sea salt and pepper to taste.
- Bake for 20 minutes, then reduce temp to 350F (180C) and bake until cooked to your taste, between an extra 1 hour to 1 hour and 20 mins.
- Remove beef from oven, transfer to a plate, cover with aluminum foil and let rest for 20 mins. Carve and serve with gravy and potatoes.
