Ingredients

  • Potato

    Flesh and skin, raw

    1 ½ Potato medium or 320g

  • Reduced fat milk

    Fluid, 2% milkfat, with added vitamin a and vitamin d

    2 cup or 488g

  • Sausage

    Beef, pork, chicken, skinless, smoked

    4 oz or 114g

  • Corn

    Sweet, yellow, canned, whole kernel, drained solids

    ¹³⁄₁₆ can (12 oz) yields or 169g

  • Celery

    Raw

    ½ cup chopped or 51g

  • Onions

    Raw

    ½ cup, chopped or 80g

  • Olive oil

    Salad or cooking

Directions

  1. Microwave potatoes for 8-12 minutes. Meanwhile, in large pot, sauté onions, celery and corn for 5-8 minutes, until soft.
  2. Chop sausage into small cubes. In separate skillet, brown sausage until crisp.
  3. Chop potatoes into cubes. Add sausage and potatoes to corn, onion and celery mixture.
  4. Mash potatoes slightly; add milk.
  5. Let simmer for 10 minutes.
  6. Serve with salt and freshly ground pepper.
