  1. Preheat oven to 375 degrees F.
  2. Small dice the vegetables and set aside. Heat oil in a sauté pan over medium heat and add the chopped vegetables. Cook until soft, about 5-7 minutes, and drain off any liquid. Add the smoked salmon.
  3. Use a hand held whisk to mix the eggs and cottage cheese until smooth
  4. Pour the smoked salmon and vegetable mixture into a casserole dish. Pour egg mixture over top, cover with shredded cheese, and bake for about 25 minutes or until eggs are completely set. Enjoy!
