  1. Prepare couscous as per package directions. .
  2. Slice chicken into tenders. Coat a pan with oil and heat over medium-high heat. Cook tender for 5-10 minutes or until cooked through and no longer pink; set aside.
  3. Combine parsley, mint, lemon juice, oil, garlic, 1/8 teaspoon salt and pepper in a small bowl
  4. Cut chicken tenders into bite size pieces and mix with 1 tsp of parsley mixture Stir the remaining parsley mixture into the couscous along with tomato and cucumber
  5. To assemble wraps, spread about 3/4 cup of the couscous mixture onto each wrap.
  6. Divide the chicken among the wraps. Roll the wraps up like a burrito, tucking in the sides to hold the ingredients in. Serve cut in half.
  7. Enjoy!
