- Heat the oil in a large pot over medium-high heat. Salt the chicken, pat dry, and brown in batches. Set aside when browned.
- Sauté the onions for 3-4 minutes, scraping the pot. Add ginger and garlic, sauté for 1-2 minutes, then add sweet potatoes and combine.
- Add chicken, broth, tomatoes, peanut butter, peanuts, coriander, and cayenne. Simmer covered for 90 minutes, checking after an hour.
- Remove chicken, cool, and shred. Discard skin if desired. Return meat to pot, adjust seasonings, and add black pepper to taste.
- Stir in cilantro and serve alone or with steamed rice.
