  1. Mix the softened butter with garlic, parsley, chives, thyme, and rosemary until well combined. Spoon onto a piece of plastic wrap, roll into a tight log, twist the ends to seal, and refrigerate until firm, about 20 minutes.
  2. Pat the steak dry and season both sides generously with salt and pepper.
  3. Place the steak in the air-fryer basket and cook at 400°F, flipping halfway through, until medium doneness, 12–14 minutes depending on thickness. For best results, cook to an internal temperature of about 135°F for medium-rare or 145°F for medium.
  4. Transfer to a plate and rest 5 minutes. Slice a round of the chilled herb butter over the hot steak just before serving.
