  1. Set an oven rack about 6 inches from the broiler and preheat the broiler. Use an oven-safe, broiler-safe 8-inch nonstick or well-seasoned skillet.
  2. In a bowl, whisk the eggs, 3/4 of the Parmesan, milk, lemon zest, salt, and pepper until well combined and slightly frothy.
  3. Heat the olive oil in the skillet over medium heat. Add the asparagus and Canadian bacon and cook, stirring occasionally, until the asparagus is crisp-tender, about 4 minutes.
  4. Reduce heat to low. Pour in the egg mixture and gently stir to evenly distribute the fillings. Cover and cook until the edges and bottom are mostly set, about 9 minutes.
  5. Uncover, sprinkle the remaining Parmesan on top, and transfer the skillet to the broiler. Broil until the top is just set and lightly browned, about 1 minute. Let rest 5 minutes, then slide onto a board, cut into wedges, and serve warm or at room temperature.
