Directions
- Prick the potato with a fork in several spots and microwave on high for 4 minutes. Allow to cool for 5 minutes, then chop into 1/2-inch cubes.
- In an 8-inch cast-iron skillet, cook the bacon over medium-high heat until crisp. Remove the bacon, leaving the drippings in the pan.
- Add olive oil and diced potatoes to the skillet, cooking and stirring frequently until browned, about 5 minutes. Add spinach and stir until just wilted, about 1 minute. Season with salt.
