- Preheat the oven to 350°F. Grease a small baking pan or casserole pan with cooking spray.
- Rinse the salmon fillets with cold water, pat dry, and remove any pin bones with long nose pliers if needed. Optionally, cut the fillets into large serving pieces. Place them in the pan, skin side down, and sprinkle with salt.
- Melt the butter. Crush the Ritz crackers to resemble coarse breadcrumbs. Mix the melted butter with the breadcrumbs and pack this mixture over the top and sides of the salmon fillets.
- Bake for 20 minutes, or until the salmon flakes easily. Adjust time based on fillet thickness.
