Directions
- Set an oven rack to the lower-middle position and preheat to 325°F.
- Heat the olive oil in a large Dutch oven over high heat. Pat the short ribs dry and season all over with salt and pepper, then add to the pot.
- Brown the ribs in batches until well seared, about 4 minutes on the first side. Flip, then add the chopped onion and the smashed garlic; cook until the second side is browned and the aromatics are softened, 2 to 3 minutes.
- Pour in the red wine, bring to a boil, and simmer 1 minute, scraping up browned bits. Add the beef broth, Worcestershire sauce, balsamic vinegar, brown sugar, bay leaves, and orange zest. Return to a boil, cover, and transfer to the oven. Braise until the meat is fork-tender, 2 1/2 to 3 hours, turning the ribs once halfway through.
- About 30 minutes before the ribs are done, place the potatoes and the garlic for the mash in a large pot, cover with cold water, season with salt, and bring to a boil. Cook until the potatoes are tender, 20 to 25 minutes.
- Drain well, return potatoes to the pot, and add the butter, milk, and sour cream. Mash until smooth and creamy; season to taste with salt and pepper.
