Balsamic vinegar 3 tbsp or 48g
Directions
- In a nonstick skillet heat 1/2 of the oil over medium-high heat.
- In a bowl, mix 2/3 of the balsamic vinegar, the mustard, and garlic.
- Pound the chicken to about 1/4" in thickness, adding it to the mixture in the bowl and coating both sides.
- Transfer the chicken and mixture to the skillet; sauté until cooked through, about 3 minutes per side.
- Transfer to a plate and keep warm.
- In the skillet, heat the remaining oil.
- Halve, or quarter if using large mushrooms. Sauté the mushrooms about a minute; add the wine, thyme and remaining balsamic vinegar. Cook stirring until the mushrooms are deep brown, about 2 minutes longer.
- Serve the chicken, topped with the mushrooms. Enjoy!
