  1. Preheat the oven to 350°F. Mash the bananas with a fork and measure to ensure you have 1.5 cups.
  2. In a bowl, whisk together the mashed bananas, brown sugar, eggs, salt, vanilla, baking powder, baking soda, and cinnamon. Add the soymilk and oats, stirring until combined. If using, chop and add walnuts.
  3. Spray an 8x8 inch glass baking dish with non-stick spray. Pour in the oat mixture, cover with foil, and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the center is set and the edges are golden brown.
  4. Serve warm or refrigerate and enjoy cold.
