  1. Bring a large pot of salted water to a boil. Cook the egg noodles until al dente, about 7 minutes, then drain and set aside.
  2. In a large heavy skillet over medium heat, melt the butter. Add the sliced beef and cook until browned. Add the onion and cook until softened. Increase heat to medium-high, add the mushrooms, and cook until browned. Transfer the mixture to a bowl.
  3. In the same skillet, add the vegetable broth and scrape up any browned bits. Bring to a boil, then simmer to reduce by about one-third. Return the beef, onions, and mushrooms to the skillet and reduce heat to low.
  4. Remove the skillet from the heat. Stir together the sour cream and flour in a small bowl, then fold into the skillet. Return to low heat and cook gently until the sauce thickens. Stir in the parsley and season to taste with salt and pepper. Serve over the cooked egg noodles.
