  • Ground beef

    90% lean meat / 10% fat, patty, cooked, pan-broiled

    1 oz or 28g

Directions

  1. Combine 1/2 cup plus 2 t of backwoods seasoning mix with 1 1/4 t of cure and 5 ounces of water. Mix until dissolved.
  2. Mix dissolved seasoning mix and cure into 5 pounds of 90 % ground beef until meat is tacky.
  3. Form into strips manually or with jerky gun. Place on oven screen.
  4. Put into smoker at 175 degrees for 1 hour 15 mins. Flip meat and rotate racks. Smoke additional 1 hour 15 mins.
