  1. Preheat oven to 400°F. Line a baking sheet if your skillet is not oven-safe.
  2. Drain and rinse the black beans, then spread on a towel and pat very dry to remove excess moisture.
  3. In a food processor, pulse about half of the beans to a coarse paste, then scrape into a mixing bowl.
  4. Add the remaining whole beans, grated carrots, chopped onion, red bell pepper, bread crumbs, cilantro, garlic, and the egg. Season with salt and black pepper, then mix just until evenly combined.
  5. Form the mixture into equal patties and chill 10–15 minutes to firm.
  6. Heat the peanut oil in a large skillet over medium-high heat. Sear patties until deep golden, about 3–4 minutes per side.
  7. Transfer the skillet to the 400°F oven (or move patties to the prepared baking sheet) and bake about 5 minutes, until heated through and set.
