  1. Heat the oven to 350° and wrap the tortillas in foil. Warm until pliable, 10–15 minutes.
  2. Meanwhile, heat the oil in a large nonstick skillet over medium-high heat. Add the chopped onion and cook, stirring, until golden, 5–6 minutes.
  3. Stir in the cumin and chili powder and cook just until fragrant, about 20 seconds.
  4. Add the bell pepper, corn, and grated carrot. Sauté until the vegetables are crisp-tender, 4–5 minutes.
