Directions
- Bring water to a boil in a pot. Add rice, bring to a boil again, then reduce heat to a simmer, cover, and cook for 40-45 minutes, or until the rice is tender. Stir once after about 20 minutes.
- While the rice is cooking, heat coconut oil in a large skillet over medium heat. Sauté carrots for about 5 minutes, or until softened.
- Add onions and garlic to the skillet with the carrots and cook for 5 minutes, or until the onions are translucent.
- Stir in the drained black beans, thyme, cumin, cinnamon, red pepper flakes, and honey. Cook for about 2 minutes.
- Add the cooked rice to the vegetables and mix well.
