Directions

  1. Allow the butter to soften. Finely chop the pickles and cocktail onions.
  2. Preheat the broiler and oil a large shallow baking pan.
  3. In a small bowl, combine the cocktail onions, pickles, mustard, butter, 1/4 teaspoon salt, and 3/4 teaspoon pepper.
  4. Arrange the mackerel fillets, skin side down, in the baking pan. Sprinkle with the remaining salt and pepper. Spread the butter mixture over the fish.
  5. Broil the fish 5 to 6 inches from the heat until just cooked through, about 4 to 6 minutes.
