  1. In a mini food processor, blend garlic, rosemary, thyme, wine, olive oil, Dijon mustard, and half of the stone-ground mustard for about 30 seconds. Transfer to a bowl, stir in the remaining stone-ground mustard, and set aside.
  2. Preheat the broiler. Line a baking sheet with foil and spray with nonstick spray. Place the salmon fillets on the sheet, season with salt and pepper, and broil for 2 minutes.
  3. Spoon the mustard sauce over the fillets and continue broiling until cooked through and golden brown, about 5 more minutes.
  4. Transfer the fillets to plates and serve with lemon wedges.
