  1. Preheat the oven to 400°F.
  2. Slice the cauliflower into 1-inch 'steaks' by cutting straight down through the middle of the crown to create two identical halves. Make additional cuts into each half, parallel to the original cuts, about an inch apart.
  3. Heat half of the olive oil in a large skillet over medium-high heat. Arrange the cauliflower steaks in the skillet and cook for about 2 minutes on each side.
  4. Transfer the cauliflower to a baking sheet. In a small bowl, stir together the remaining olive oil, lemon juice, dill, and minced garlic. Brush or spoon the mixture evenly over the cauliflower. Sprinkle with salt and pepper to taste.
  5. Roast in the oven until the cauliflower reaches the desired tenderness, about 10 to 15 minutes. Serve immediately.
