Directions

  1. Preheat oven to 450F. Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Stir in taco seasoning and water; cook until thickened.
  2. Lightly grease a rimmed baking sheet; place 4 tortillas on baking sheet.
  3. Heat beans according to package directions and spread on each tortilla; spread meat mixture over beans.
  4. Top each with remaining 4 tortillas. Bake 6 minutes.
  5. Spread enchilada sauce over tortillas; sprinkle with cheese. Bake 5 minutes or until cheese is melted; serve with desired amount of sour cream and salsa.
