  1. Preheat oven to 375°. Grease a large baking sheet with cooking spray.
  2. Place riced cauliflower on a skillet over medium heat and cook for 5 minutes. Then on a clean kitchen towel, squeeze to drain water, then transfer cauliflower to a large bowl with egg, cheddar, Parmesan, Panko and mix until combined. Season with salt and pepper to taste.
  3. Spoon about 1 tablespoon mixture and roll it into a tater-tot shape with your hands. Place on prepared baking sheet and bake for 15 to 20 minutes, until tots are golden.
  4. Serve with spicy ketchup.
