  1. Preheat the oven to 425°F. Line two pizza dishes or a large baking sheet with parchment paper.
  2. Chop the cauliflower into florets and pulse in a food processor until it resembles rice.
  3. Place the cauliflower in a microwavable container, cover, and microwave for 10 minutes. Transfer to a large bowl and mix with eggs, 2 cups of mozzarella, oregano, garlic, salt, and pepper.
  4. Divide the mixture in half and shape each half into a pizza crust or rectangle on the prepared sheets.
  5. Bake for 25 minutes until golden. Sprinkle with the remaining mozzarella and bake for another 5 minutes until the cheese melts.
