Directions
- Preheat the oven to 400°F and line a baking sheet with foil.
- Cut the spaghetti squash in half and scoop out the seeds. Rub or spray the interior with oil and season with salt and pepper.
- Place the halves cut side down on the baking sheet and roast in the oven for about 40 minutes or until tender.
- Remove from the oven and let cool until manageable. Scoop out the flesh with a fork into a bowl and reserve the shells.
- Preheat the oven to broil.
- Heat a large non-stick skillet over medium-high heat, spray with oil, and cook the chicken seasoned with salt and pepper until done. Remove and set aside.
