  1. Preheat the oven to 175 °C (345 F, gas mark 3).
  2. In a bowl, combine the ground almonds, coconut flour, Parmesan cheese, salt and baking powder. Add the egg and mix well.
  3. In another bowl, microwave the grated cheese and butter for 1 min on full power (add another 30 seconds if needed). Mix well.
  4. Add the butter-cheese mixture to the dry ingredients and combine with your hands or with the back of a spoon to make a firm, smooth dough
  5. Place the dough on parchment paper and cover with a second piece of parchment paper. Use your hands or a rolling pin to roll out the dough and make a rectangle about 5 mm thick.
  6. Spread the pesto over the top and cut into 1-inch (2.5 cm) strips; twist each strip lengthways.
  7. Brush the twisters with the beaten egg and bake for about 20 minutes until they turn golden brown.
