Directions
- Melt one-fourth of the butter in a large pot over medium heat.
- Add chopped carrots, celery, and diced onion; sauté for 4 minutes. Add minced garlic and sauté for an additional minute.
- Stir in vegetable broth, cubed potatoes, thyme, salt, pepper, paprika, and cayenne. Bring to a boil, reduce heat to medium, cover, and simmer for 15 minutes or until potatoes are almost tender.
