- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1 cup pasta water, then drain.
- In a large skillet over medium heat, cook the chopped bacon until the fat renders and the bacon is crisp, about 5-7 minutes. Transfer bacon to a plate, leaving fat in the pan.
- Season the diced chicken lightly with salt and pepper. Sauté in the bacon fat over medium-high heat until cooked through to 165°F, 6-8 minutes. Transfer to the plate with the bacon.
- Reduce heat to medium. Add the chopped onion and mushrooms, and cook until softened and lightly browned, 4-5 minutes. Stir in the minced garlic and cook 30 seconds until fragrant.
- Pour in the heavy cream and sour cream, and s simmer gently, stirring, until slightly thickened, about 5-7 minutes. Return the chicken and bacon to the pan.
