  1. Heat a saucepan over medium high heat. Add the olive oil, onions, peppers, and garlic and cook until soft. Stir in the seasonings and season with salt and pepper. Cook for 1 minute and add the tomatoes, broth, and 1 cup water. Bring to a boil and add the chicken. Simmer until the chicken is cooked through, about 10 minutes. Remove the chicken breast, allow to cool slightly, and shred. Add back to the pot. When the soup is heated through, serve topped with the sour cream.
