Directions
- Preheat your air fryer to 400°F (200°C). Season the chicken breast pieces with salt and pepper. Drizzle with 1 tablespoon of olive oil and toss to coat. Place the chicken pieces in the air fryer basket in a single layer and cook for 8-10 minutes, shaking the basket halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Set aside.
- In a large microwave-safe skillet or shallow dish, heat 1 tablespoon of olive oil on high for 30 seconds. Add the diced onion and carrots, and microwave for 2-3 minutes, or until the vegetables begin to soften. Stir in the frozen peas and minced garlic, and microwave for another 2 minutes.
