  1. Preheat a nonstick skillet and add 1 Tbsp of organic refined coconut oil
  2. Wash organic skinless, boneless chicken breast, pat dry with paper towel and season with salt on both sides
  3. Skillet cook the breast for desired time.
  4. Preheat over to 350 degreese
  5. Cut out center from portabella mushroom, and wash by wiping with clean cotton or paper towel, pat dry
  6. Add one slice of organic mozzarella cheese and put on top of mushroom and put in over until the cheese starts to melt
  7. Glaze top of chicken and mushroom with 1 tbsp of balsamic vinegar
