Directions
- Preheat oven to 200C, rack in middle. Saute onion in large pot. Add ginger & garlic, stir 30 secs. Add carrot & chicken broth, bring to boil. Add grated apple, honey & salt. Simmer uncovered 20 mins, stirring occasionally. Add potatoes, cook 15 mins until tender. Remove from heat. Meanwhile, to make curry roux, melt butter in small saucepan. Add flour, cook 20 mins on low, stirring continuously. When light brown in colour, add curry powder and garam masala. Cook, stirring, 30 secs, then remove from heat. Dissolve roux in hot broth ladled from the pot, then add back in. Add soy sauce & ketchup. Simmer uncovered on low until thick. Meanwhile, make chicken katsu. Toast panko in oil until golden. Halve chicken breasts, season. Dredge chicken in flour, then egg/water mixture, then panko. Bake 25-30 mins. Meanwhile, cook rice to serve.
