- Preheat oven to 350°F and place a rack in the middle. Flatten chicken cutlets between sheets of plastic wrap to about ¼-inch thickness using a meat mallet. Season with some of the salt and pepper.
- Lay chicken cutlets on a working surface, top each with a slice of ham and mozzarella. Roll up from a narrow end and secure with kitchen twine or toothpicks. Season with remaining salt and pepper.
- Heat olive oil in a 10-inch oven-proof nonstick skillet over medium-high heat. Place chicken seam-side up in the skillet and brown lightly. Turn chicken, add white wine, and let it evaporate.
- Add chicken stock to the skillet and transfer to the oven. Bake for 15 to 20 minutes or until cooked through. Remove from oven, slice each roll on a slight bias into 5 pieces, drizzle with pan juices, and serve.
