- SATAY DRESSING: In a bowl, whisk together peanut butter, coconut milk, minced garlic, lime juice and soy sauce
- Dice the chicken and mix well with satay dressing
- Cover and refrigerate for 30 minutes or overnight
- When chicken is marinated, cook rice, using a ratio of 1 rice to 2 water. Add water to a pot and place over medium heat
- When boiling, add rice and allow it to come to a gentle simmer
- Cover the saucepan and reduce heat to low. Allow to simmer until rice is tender and water is evaporated
