  1. SATAY DRESSING: In a bowl, whisk together peanut butter, coconut milk, minced garlic, lime juice and soy sauce
  2. Dice the chicken and mix well with satay dressing
  3. Cover and refrigerate for 30 minutes or overnight
  4. When chicken is marinated, cook rice, using a ratio of 1 rice to 2 water. Add water to a pot and place over medium heat
  5. When boiling, add rice and allow it to come to a gentle simmer
  6. Cover the saucepan and reduce heat to low. Allow to simmer until rice is tender and water is evaporated
  7. Heat oil in a fry pan over medium heat. Once heated, add marinated chicken and cook well
  8. Serve chicken on top of rice, sprinkle peanuts on top and enjoy!
