  1. Spray a pan with non-stick spray and cook the chicken for 8-10 minutes per side or until cooked through. Let it rest for 5 minutes before cutting into bite-sized pieces.
  2. Heat the olive oil in a large pan over medium heat. Add the onions, carrots, and thyme, then gently fry for 15 minutes.
  3. Stir in the chicken stock, bring to a boil, cover, then simmer for 10 minutes.
