Directions
- Trim excess fat from the chicken thighs and season with salt and pepper.
- In a large skillet, melt butter with oil over medium-high heat. Add chicken and cook, turning often, until lightly browned, about 10 minutes.
- Remove chicken and set aside. Pour off all but 1 tablespoon of fat from the skillet. Add onion and cook, stirring, until softened, 3 to 5 minutes. Add broth and stir to deglaze the skillet.
