  1. Preheat the oven to 350°F.
  2. Scrub the sweet potato, pierce it all over with a fork, and wrap tightly in foil.
  3. Place on a baking sheet and roast until very soft and caramelized, about 2 hours. Let cool until easy to handle, then peel if desired.
