Directions
- Chop the cashews.
- Heat butter in a frying pan then roast cashews until golden, about 5 minutes. Set aside once done.
- Add the condensed milk and 1 cup of coconut to the pan. Stir over low heat.
- Stir the mixture thoroughly until the condensed milk thickens, about 10 minutes.
- Once the condensed milk mixture has thickened, stir in the cashews and remove the pan from the heat.
- Allow to cool completely then roll the mixture into balls. Use the remaining coconut to prevent sticking.
- Move to the refrigerator to completely set. Enjoy!
