Ingredients

Directions

  1. Preheat the oven to 200°C/180°C fan.
  2. Prepare the cauliflower mash with the ingredient quantities listed in this recipe.
  3. Heat the oil in a frying pan, over medium heat. Fry the onions and garlic, until softened.
  4. Add the beef mince and break it up with a wooden spoon into small chunks. Cook until browned.
  5. When the beef is browned, add the tomato puree, celery, and carrots. Stir and cook for 3mins.
  6. Add the stock, thyme, bay leaves, and salt and pepper to the beef mixture. Cook for 15mins, or until the liquid is reduced.
  7. Place the cooked beef mix into a 2.2L (roughly) oven-proof baking dish and flatten. Spread and cover with cauliflower mash evenly on top, and sprinkle with remaining 50g of cheese.
  8. Bake for 15mins, or until the cheese on top is golden brown.
