- Heat the oil in a large pot over medium heat. Add the leek and saute until softened, about 5 minutes. Then add the parsnips, cauliflower, stock, thyme, salt and pepper. Cover the pot, bring to a boil over medium heat, then reduce the heat to low and simmer for about 20 minutes. Remove the pot from the heat. Puree the soup in the pot using an immersion blender. Stir in the parsley, serve.
