Directions
- Place the chicken on a cutting board and cover with plastic wrap. Use a mallet or rolling pin to gently pound the chicken to an even thickness, about 3/4-inch thick. Slice each chicken breast in half and season with salt and pepper.
- Heat the canola oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown on each side and cooked through, about 5-7 minutes per side.
- While the chicken cooks, roughly chop the spinach and artichoke hearts. Mince the garlic.
