  1. Preheat the grill to high. Spread the mustard over the two slices of bread then make a sandwich with the ham and half of the cheese. Spread the butter over the outside of the sandwich then lay in a dry non-stick frying pan and cook for 2–3 minutes on each side until toasted and golden brown. Slide the sandwich onto a baking tray, spread the yoghurt over the top then sprinkle over the remaining cheese. Season with salt and pepper then slide under a hot grill for a couple of minutes until the cheese has melted and starts to turn golden. Serve with a simple green salad.
