  1. Cook the rice according to package instructions.
  2. In a food processor, blend the onion, garlic, and ginger until smooth.
  3. Heat olive oil in a large saucepan over low heat. Add the onion/garlic/ginger paste, cover, and cook for about 5 minutes, stirring occasionally.
  4. Stir in the spices, then add the carrots and water. Cover and cook for 20-30 minutes until the carrots are tender.
