Directions
- Melt coconut oil over medium-high heat in a medium-sized stock pot. Add chopped onion, minced garlic, and peeled and grated ginger, cooking for 5 minutes.
- Add chopped carrots and cook for 3 more minutes. Stir in broth, cayenne, and cilantro leaves, and bring to a boil. Once boiling, lower heat, cover, and simmer until carrots are tender, about 15 to 40 minutes.
- Add coconut milk and cook until warmed through. Puree the soup using an immersion blender or transfer to a blender, then return to the pot. Add more stock if the soup is too thick.
- Stir in lime juice and adjust seasoning with salt to taste. Garnish with cayenne pepper and fresh cilantro leaves. Serve hot.
