  1. Heat a large skillet over medium-high. Add the sesame oil and ground turkey. Cook, breaking up the meat, until no longer pink and lightly browned.
  2. Add the shredded cabbage, onion, carrots, and celery. Stir-fry until starting to soften, about 8–10 minutes.
  3. Stir in the alfalfa sprouts and garlic, and cook until fragrant and the vegetables are tender, 2–3 minutes.
  4. Add the soy sauce and ground ginger. Toss to coat and heat through. Adjust seasoning to taste and serve.
