  1. Heat a medium-sized non-stick pan over medium-high heat. Add half of the olive oil and the chopped bacon. Cook the bacon for about 3 to 4 minutes until the edges start to crisp.
  2. Add the sliced Brussels sprouts and sauté for another 2 to 3 minutes until they are tender. Add the pistachio nuts and toss to combine. Transfer the hash to a serving plate and return the pan to medium-high heat.
  3. Add the remaining olive oil to the pan and crack the egg into it. Fry the egg to your liking, then slide it over the hash. Season with salt and pepper to taste. Enjoy!
