  1. Preheat the oven to 420°F.
  2. Chop the sweet potato and red potato into pieces, then place them on a nonstick baking sheet or parchment paper. Spray with olive oil, then season with salt, pepper, and the seasoning blend. Bake for about 20 minutes.
  3. Spray a skillet with olive oil and set it over medium-high heat.
  4. Cook the turkey bacon for about 3 to 4 minutes on each side until crispy. For extra crispiness, spray with olive oil while cooking.
  5. Once the bacon is nearly done, add the eggs and spinach to the skillet. Cook the eggs sunny-side up or to your preference, and cook the spinach until it wilts, about 2 minutes.
  6. Plate the eggs, bacon, and spinach, and serve with the roasted potatoes. Season with additional salt and pepper to taste.
