Ferrero Raffaello Candy Recipe

Ingredients

• Sugar

  White, granulated sugar

  1 cup or 200g

• Butter

  Unsalted

  1 cup or 227g

• Dry milk

  Whole, with added vitamin d

  2 cup or 256g

• Coconut

  Brooks Tropicals

  1 ½ cup or 150g

• Vanilla wafer cookies

  Lower fat

  1 cup, crumbs or 80g

• Almonds

  Nuts, blanched

  1 tsp or 3g

• Almonds

  Nuts, raw

  ½ cup, ground or 48g

• Coconut

  Whole Tropical Fruit - Freshdirect

  ½ cup shredded or 40g

• Cream cheese

  2 oz or 57g

Directions

1. Combine sugar together with butter until the texture is creamy.
2. Mix dry milk into the butter.
3. Crush wafers. The easiest, most mess-free way to do this is by placing cookies in a bag and crushing them with a rolling pin or a meat tenderizer. Add wafers, almond extract and tiny pieces of coconut flakes into the mixture and mix until you get a paste-like texture.
4. Using an ice cream scoop, place 1/2 of the almond mixture inside and make a small round piece.
5. Roll each candy into coconut flakes. Repeat for each piece.
