Ingredients
Brown sugar
1 tsp brownulated or 3g
Rice wine vinegar
1 tbsp or 15g
Directions
- Cook rice according to package directions.
- In a bowl, combine garlic, ginger, soy sauce, brown sugar, rice wine vinegar, and five-spice. Add as much sliced chili as you like. Toss the chicken in this marinade and let sit for at least 20 minutes.
- Heat the oil in a large skillet over medium-high heat until shimmering. Add the marinated chicken (reserve excess marinade in the bowl) and cook, stirring occasionally, until browned and cooked through to 165°F, about 7–9 minutes. Add a splash of water every few minutes to deglaze and loosen browned bits, stirring to coat the chicken with the pan juices.
- While chicken cooks, trim the base from the pak choi and cut crosswise into sections.
- Stir the scallion whites in with the chicken and cook 30 seconds. Add the pak choi and stir-fry until just wilted and crisp-tender, about 2 minutes.
- Fluff the rice and serve the chicken and pak choi over it. Garnish with the scallion greens.
